開門七件事中的『醬』,過去以為只是調味之道,但你用得好,它是為你保持腸道路路暢通的補品。

我說的『醬』,是日本人每餐不可缺的『麵鼓醬』,用黃豆發酵出來的麵鼓醬。有的品種也會加入薏米、大米,發酵時間由幾個月到幾年。(不少廠商取巧,放了砂糖、酒精,時間是快了,但健康裨益就差得遠了。添入味精的就更不要提。)

麵鼓醬的品種很多,味道有鹹有甜,質地有粗有幼,色澤有深褐虎珀、玉桂紅、濃朱古力、鮮黃、奶白。

簡單來說,深色、發酵時間較長 (如兩年) 的麵鼓醬就較『補』,適合寒冷天氣,身體較虛弱的人;淺色、深酵時間短的(如只有數個月),就適合炎夏天氣,身體強壯的。發酵時間一年左右的,不太深不太淺色的,就合一般人長年使用。

此外,肉食者適宜選較淺色的品種,而素食朋友就可挑選較鹹、深色的麵鼓醬。

從營養成份看,麵鼓醬含豐富預先分解了蛋白質,達13-20%,其氨基酸組成比例也跟肉類相似,且更易吸收,又有少量的維他命B12。而最重要的,是含有幫助消化分解食物的酵素,以及對製造維他命很必需的乳酸菌。西方食療學問中,紓解便秘有多種方法,包捉增添水份、纖維和益菌。每餐一碗麵鼓湯,對保持腸道健康常有意想不到效果,正是這麵鼓補充了益菌的緣故。(市面有一些『活性乳酸菌飲品』,常加因儲存不當,又加了砂糖,使得體內水份滯留,反可能打擾了水份平衡。)

不要少看麵鼓醬像是不很清潔的,其實它消化後呈鹼性,有助淨化血液。近年更有日本研究發現,麵鼓湯可減輕吸煙、空氣污染、輻射對身體的破壞。一般西方淨血食物多傾向寒涼,常見如小麥草、螺旋藻、藍綠藻,多吃易貧血、手腳冰冷,麵鼓湯的淨血,卻沒有此弊病。

由於麵鼓醬味道濃郁,是不少肉食者初轉素食時的最喜愛食物。但是也要小心。麵鼓醬普遍含高鹽份,蛋白質成份很高,多吃也會使人精神繃緊,加重心、腎臟負擔,不易鬆弛神經。(相同道理,鼓油也有相似情況。)

選購麵鼓醬

麵鼓醬是有生命的食物,蘊含大量活生生的微生物。故此,不要挑選曾高溫消毒(pasteurized)的產品。加入味精、砂糖、酒精的也不可取。健康食品店中有些是用不含化學農藥的黃豆釀製,那就最好不過。

麵鼓湯基本法

烹調時,為免殺了麵鼓裡面的益菌,最好也不要過火,待其他食物煮好後,才另加入用少量開水攪溶了的麵鼓醬,混和一起,最多用慢火再煮幾分鐘就好了。


麵鼓湯的基本配料如下:

半杯 昆布或羊栖菜 (預先煮好,切細絲)

一杯 菜粒 (可選紅蘿蔔、白蘿蔔、椰菜、冬菇、蓮藕、大豆芽、豆腐、洋蔥、牛蒡、茼蒿、蕃薯)

酌量 調味 (例如芝麻、烘紫菜、麵包糠、薑絲、蒜、白酒或米酒、芫荽、黑椒、薄荷葉)

一茶匙 芝麻油

四至六杯 浸過昆布或羊柄菜的水

二至三湯匙 麵鼓醬


做法

(一)先把昆布或羊栖菜、菜粒快炒爆香;

(二) 加水煮沸;

(三)轉慢火煲15分鐘;

(四)用另碗溶解麵鼓醬,攪成糊狀;

(五) 混入湯,再慢火煮五分鐘;

(六) 熄火加調味,即成

合4-6人用。

答:不會,但是你必須選擇含豐富蛋白質的食物,以替代動物性蛋白質的營養。在師父的樣書中有談到素食,有告訴你們什麼食物有足夠的營養。肉並不是那麼好,這個大家現在都知道了,你們看,醫院滿滿都是吃肉的病人,吃素的人很少上醫院,社會愈文明,人們吃肉愈多,醫院也蓋得愈多。

如果你怕吃素不夠營養,看看大象、看看馬、看看牛,有什麼比大象更強壯的呢?牠吃什麼?我告訴你,牠根本不在乎什麼蛋白質。不要騙自己了,素食是很健康的,就連拳王阿里也吃素,所以不要再跟我說那些無稽之談。如果你要吃肉,那你就吃,沒有人會說話,就是不要找藉口。肉並不好,很骯髒,裏面滿滿各種細菌、各種毒素。當動物被殺時,種種嗔恨、恐懼、害怕的感覺與磁場都會停留在肉裡面,當你吃肉時也同時吃下所有這些能量,這些能量非常沉重,使你無法解脫「回家」。

咦! 咁喏嘅, 我同農夫呢排都係 "開始" 緊食素喎. 我哋最近討論嘅話題同你上面講嘅都係差唔多, 依家開始戒食紅肉, 飲多啲豆奶, 食多啲豆腐. 然後以 "唔將動物屍體放入肚" 為原則 (但會飲白肉湯), 一步一步習慣完全食素.

但係我哋都諗緊, 南丫島住嘅素食者, 可以開飯嘅選擇都幾少. 最好就自己煮啦, 其次就書蟲啦 (都幾貴), 之後就... ... Rolling Eyes

其實只要將麵鼓醬放落熱水攪溶就係一碗無料的麵鼓湯, 都好好味嫁

另外薏仁(即薏米)都含高量蛋白質, 還可美白肌膚, 健脾利濕, 補肺, 清熱之功效

我就鐘意腐竹薏米糖水;薏米買番來浸一陣水,然後加腐竹冰糖滚一陣(小心滚瀉)再加多隻糖心蛋。簡單方便又好味。 Thumb up

係呀, 可以加原糖吊味,但一定不可以用白糖
